Abstract: Each year in the US, 76 million people suffer from food-borne illness resulting in 5000 deaths. We will discuss the broad issues of food safety and biosecurity. These will include the causes of food borne illness, the effects of industrialization and globalization of the food industry, and the regulatory statutes and government agencies charged with protecting the food supply. Several recent high-profile outbreaks have resulted in increased scrutiny of our overall approach to food safety. Changes in policy are likely in the near future.
